Chicken tinga tacos under 30 min. Makes 6-8 tacos. Here's what you'll need: Chicken: 1-1-1/4 lb boneless, skinless chicken thighs (about 6), seasoned with salt. Onion: 1 medium onion, sliced. Flavor: 1 pouch Arriba Roasted Chipotle Taco Seasoning + cooking oil, tortillas and taco toppings. Let’s Get Cooking: 1. Heat 1 Tbsp oil in a 10-12 skillet over medium heat. Sauts onion until browned, about 10 minutes. Remove to a plate. 2. Add 1 Tbsp oil, cook chicken until browned, 4-6 minutes per side. 3. Lower heat, add onions back to skillet, pour Taco Seasoning over chicken, cover, and simmer until cooked, 6-8 minutes. Shred and serve in warm tortillas with avocado, sour cream, and cilantro Tip: Instead of tortillas, serve over steamed rice or diced, cooked red potatoes.
